Jalapeño Cheddar Buttermilk Biscuits
These biscuits are super versatile and can be frozen and baked whenever you want!
Ingredients
3 cups (360g) all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
2 sticks of cold butter, cubed
1 8-ounce block of sharp cheddar cheese
3 medium-sized jalapeños
1 cup (240g) buttermilk, cold
Method
Combine your flour, baking powder, baking soda, salt, and sugar in a large bowl.
Cut your cold butter into cubes and add to the flour mixture. Toss ingredients together.
Using your fingertips, smash the butter into the flour mixture until you have varying sized pieces of butter throughout.
Place bowl in the freezer for about 30 minutes.
I like ensuring that my ingredients are all very cold as I’m prepping my biscuits. I also do this when working with different pastry dough as well.
Using a grater, shred your block of cheddar cheese into a medium-sized bowl.
Dice up your jalapeños and add to the bowl with your cheddar cheese. Mix to combine.
Take your flour and butter mixture from the freezer and add in the jalapeño and cheddar cheese mixture. Stir to combine.
Slowly pour in your buttermilk to the ingredients and with a spatula, begin mixing things together.
Use your hands and continue mixing ingredients together for about 30 seconds.
Beware of overworking the dough. You should have floury pieces remaining and it shouldn’t be fully wet. Adding too much buttermilk can impact the bake and overall texture.
Pour onto your work surface and shape into a rectangle.
Cut rectangle into 3 strips and stack the 3 strips on top of each other. Next, smash them together and form a rectangle again.
You’ll want to do this at least three times — this helps ensure you have a biscuit with a lot of layers!
Form dough into a rectangle again and cut 8 biscuits using a knife or pastry cutter.
Place on parchment lined paper and put in the freezer for 30 minutes.
Preheat your oven to 450 F.
After 30 minutes, remove your biscuits from the freezer and brush buttermilk on top of each biscuit.
Lower your oven temperature to 400 F and place biscuits in the oven for 25-28 minutes.
Remove and let cool for 5 minutes.
