Maple Pecan Cake: Snacking Cake #2
Snacking Cake #2 - I'll be posting snacking cakes regularly. They'll be ranging in flavors, but the main goal is to keep them as one layer for me (and you) to enjoy during the week.

I bought Maple Sugar back in Michigan over the summer and I’ve had it on my shelf waiting for something to do with it. I love pecans on cake, but wanted an added texture so I knew candying them with the maple sugar was the perfect call.
EQUIPMENT:
9-inch cake pan
Bowls
Off-set spatula
INGREDIENTS:
CAKE
200 grams all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
150 grams brown sugar
80 mL maple syrup
115 grams butter
1 tablespoon vanilla extract
2 eggs (room temperature)
120 mL milk
100 grams pecans, chopped
FROSTING
50 grams butter, room temperature
200 grams powdered sugar
60 mL maple syrup
1 tablespoon vanilla extract
1 pinch of salt
CANDIED MAPLE PECANS
50 mL water
100 grams pecans
100 grams maple sugar
If you don’t have Maple Sugar, that’s ok! You can just use granulated sugar and make regular candied pecans.
METHOD:
Preheat oven to 350 F. Grease and line a 9-inch round cake pan
Make the cake batter
In a large bowl, combine flour, baking powder, and salt.
In another bowl, beat together the butter and brown sugar until light and fluffy. Next, add maple syrup and vanilla extract. Beat until combined.
Add eggs to the mixture, one at a time, beating well.
Gradually add the dry ingredients, alternating with the milk. Mix until just combined.
Fold in your chopped pecans.
Make the candied pecans
Heat maple sugar and water in a pan over medium heat.
Add whole pecans and stir until the sugar has dissolved and the nuts are fully coated.
Spread on a baking sheet to cool fully.
Chop into pieces and set aside.


Make the frosting
Beat your butter until light.
Add powdered sugar, maple syrup, salt, and maple syrup until smooth.
Assemble
Add cake to a cake stand
Top cake with frosting
Chop up candied pecans and add to the top of your cake
Enjoy!
