Mini Berry Cobbler with Homemade Vanilla Bean Ice Cream
A quick and easy dessert to make if you forgot today’s Valentine’s Day!
I made my own ice cream, but that is totally optional! You can use your favorite ice cream recipe, do a no-churn ice cream recipe, or buy something from the store. I have a KitchenAid ice cream bowl, which I know works different from other kinds. Do what works best for you!
INGREDIENTS
COBBLER
For the Strawberry Buttermilk Biscuits
• 1 cup (125g) all-purpose flour
• 2 tbsp granulated sugar
• 1 ½ tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• 3 tbsp (42g) cold butter, cubed
• ⅓ cup + 1 tbsp (90ml) buttermilk, cold
• ¼ cup (37g) diced fresh strawberries
• 1 tbsp heavy cream or melted butter (for brushing)
• 1 tbsp coarse sugar (for sprinkling)
For the Cobbler Filling
• 2 cups (300g) frozen fruit of choice
• 1 large lemon
• 1 tablespoon cornstarch
• 1 tablespoon of vanilla extract
• 1/3 cup (65g) sugar
Vanilla Bean Ice Cream
• 1 cup (240g) whole milk
• 1 cup (240g) heavy cream
• 1/2 cup (100g) granulated sugar
• 1 pinch of salt
• 1 tablespoon vanilla
• seeds from 1 vanilla bean pod
METHOD
Make the ice cream
Combine all ingredients into a large bowl and whisk until combined.
Add to your ice cream maker and use the machine’s instructions to make your ice cream
Add to a container and let the ice cream fully set for about 2 hours while you work on the cobbler.
Make the biscuits
Combine the dry ingredients in a bowl.
Cut the butter into cubes and add to the dry ingredients. Mix together to get coated in flour.
Dice up your strawberries and add to the bowl and mix together to get coated.
Add in your buttermilk and the fold together until a dough forms.
Dump dough onto a flour surface and combine.
Next, flatten and cut into 3 logs. Stack the logs on top of each other and then flatten. Do this three times.
Cut the biscuits into whatever shape you’d like — I used a heart cookie cutter and was able to get 10 hearts and used 6 total.
Place on parchment lined baking sheet and in the fridge for about 30 minutes.
Prepare the cobbler
Mix cobbler filling ingredients together in a bowl
Add cobbler filling to your baking dish
Top with 6 of your strawberry biscuits
Brush strawberry biscuits with heavy cream and then sprinkle on cane sugar
Bake the cobbler
Preheat oven to 375 F.
Bake cobbler for 30-35 minutes until all the biscuits are golden brown and the filling is bubbly.
Let cool slightly, serve and enjoy with ice cream!
