Blackberry Lemon Galette
A perfect spring treat and how I get inspiration for some of my dessserts
I love hosting bake clubs with my friends in Atlanta and as the weather starts to warm up, that allows for more opportunities for fun themes! I’m starting to plan out a fruit theme shortly, which means I’m already testing out a few different recipes.
I get asked a lot about how I get inspiration for my baked goods, and a lot of the time I think about what’s around me and how I can incorporate those flavors into things that I love to make.
Galettes are extremely forgiving, versatile, and are great no matter the time of year. I chose blackberry lemon after being inspired by Dillon’s Blackberry, Lemon, and a Dash of Elderflower Gin Cocktail. These cocktails are flavor-forward, never too sweet and crafted for real cocktail lovers.

Ingredients
For the cocktail

For the galette dough
1 1/2 cups (180g) all-purpose flour
3 tablespoons granulated sugar
1 teaspoon kosher salt
Zest of 1 lemon
1/2 cup (8 tablespoons / 112g) salted butter, cold and cubed
1/4 cup (60mL) cold water
For the filling
4 cups fresh blackberries
3 tablespoons sugar
Zest of 2 lemons
Juice of 1 lemon
For the garnish
1 tablespoon sugar
1 large egg, whisked
1 tablespoon water
1/3 cup slivered almonds
Method
Make the dough
In a large bowl, add the flour, sugar, salt, and lemon zest. Stir to combine.
Add the cubed butter and toss to ensure the butter is fully coated in the flour.
Using your fingertips, press the butter into the flour to create varying sized pea-sized pieces.
Slowly stream in cold water and toss mixture with a fork— things should slowly start forming.
Use your hands and press pieces together and form into one large mass of dough. Place in plastic wrap and in the fridge for about 1 hour.
Combine the filling
In a large bowl add the filling ingredients. Mix to combine and set aside.
Assemble
On a floured surface, roll out the galette dough and place on top of a parchment lined pan.
Add the sugar to the galette dough and create about a 1-inch border around the edge.
Using a slotted spoon, carefully place the blackberry filling on top of the sugar base, leaving behind excess juice.
Fold the edges of the galette onto itself and place in the fridge for an hour.
Before the hour is up, preheat your oven to 400F.
Remove the galette from the fridge once the oven is heated. Brush on the egg wash and add on the slivered almonds around the edge.
Bake in the oven for about 30 minutes. The edges will be deeply golden brown and the blackberries will be slightly bubbly.
Let rest for about 10 minutes before eating as is or serving with vanilla bean ice cream!
